Gluten… Yep it seems to be the topic of every dietary conversation these days…so what the heck is GLUTEN anyway???  Gluten is a protein found in wheat, rye, oats and barley. It is the composite of a prolamin and a glutelin conjoined with a starch in the endosperm of various grass-related grains. Gliadin, a water-soluble, and glutelin, a water in soluble compose about 80% of the wheat seed. MANY people are allergic to gluten (protein) and they don’t even know it!!! Here are the signs of gluten allergy/exposure: fatigue, abdominal bloating, skin problems or rashes, diarrhea or constipation, mood swings, depression, mouth ulcers, and Crohn’s disease.  If you have a gluten allergy you NEED to follow a STRICT gluten free diet as you are allergic to ANY food containing flours, grains, wheat, rye, barley, or oats. You CAN eat foods containing rice, potatoes, veggies, fruits, eggs, cheese, milk, meat or fish as long as they are NOT cooked with wheat flour, batter, breadcrumbs, or sauce containing any of these ingredients!
